Red, White and Blueberry Granola
I was inspired by a client to make homemade granola. With the cost of food these days- granola is one thing that can be easy to make and save you some extra money at the store. Making granola from scratch can help you to control what is in it. Do you prefer extra fiber and healthy fats? Throw in some flax and chia seeds! Are you obsessed with dried strawberries? Add them in for color and flavor! This is my Fourth of July inspired Red, White and Blueberry Granola.

This granola uses dried cranberries (I purchased the low sugar Ocean Spray kind), dried blueberries (from a mix I found at Target) and dried, unsweetened coconut chips to give its signature color. The recipe yields about 5 cups of granola (give or take) and goes great with yogurt parfaits or as a snack alone.
Cooking Tip: We had quick oats in our pantry- so that is what we used! If you are using old fashioned or rolled oats- you may need to add an additional 5-7 minutes cooking time to your granola. Making sure you press down the granola firmly into the sheet pan each step of the cooking process will help to ensure better clumps when cooled.

Red, White & Blueberry Granola
INGREDIENTS:
2 1/2 cups oatmeal (I used quick oats)
1/4 cup honey
1 tsp cinnamon
1/2 tsp vanilla
1/2 tsp sea salt
1 cup nuts of choice
3 TB coconut oil, melted
2 egg whites
1/4 cup seed of choice (I used flax & hemp seed)
1/4 cup dried cranberries
1/4 cup dried blueberries
1/2 cup dried coconut flakes (unsweetened)
Directions:
Preheat oven to 300 F.
Whisk egg whites & coconut oil for about 1 minute, until foamy.
Add cinnamon, salt, vanilla, honey & mix thoroughly.
Stir in dry ingredients (dried cranberries, dried blueberries, coconut flakes, nuts, seeds and oatmeal).
Grease sheet pan (we used 16x22) and press mixture into pan.
Bake 20 minutes. Flip granola and press again firmly into pan.
Bake 15 more minutes (if using rolled/old fashioned oats do 20 minutes).
After baking, allow to cool completely before breaking apart.
