Healthy Papaya Breakfast Boats

I was inspired to make these after seeing a dietitian I follow on Instagram (@lisahayim) make something similar. I was at ALDI and saw papayas and had to grab one! I used what I had in my kitchen for these papaya breakfast bowls.

These papaya boats take less than 10 minutes to make and are such a fun breakfast- especially if you want to escape the winter for something more tropical.

This was my first time trying papaya (that I can remember). It is subtly sweet and reminded me of cantaloupe. The seeds are edible but have a peppery taste, so I removed them for the breakfast boats.

These are healthy and balanced to start the morning as they include your source of carbohydrate for energy (papaya & granola), fat for blood sugar and satiety (nut butter, hemp seeds and almonds) and protein for fuel (Greek yogurt). You have GOT to try these. Let me know your thoughts or tag me in your photos @emmathedietitian! Recipe is below- enjoy!
