Lemon & Spinach Shrimp Pasta

Updated: Feb 15, 2022

This pasta was AMAZING! When I put in on my Instagram story- I had a lot of people asking for the recipe! With a lot of dishes trying out, I made it up as I went but made sure to write down what I used to share in a recipe. For this recipe, I used frozen shrimp- fresh would be just as delicious! I also used Grant's rosemary butter he likes to make for his steak time-to-time. I found a recipe online here that would be similar- I will have him write down what he does an post it at some point. Other alternatives would be to use regular butter and add extra rosemary or do a rosemary infused olive oil instead.

I used soy bean pasta for this recipe. I love this- great source of protein and fiber but does not hurt my stomach like some lentil pastas do! This is a great alternative for those who are gluten free. You can substitute whichever you would like- this recipe made about 4 servings.

If you are looking for a healthy, refreshing, veggie and protein packed pasta- this is the PERFECT dish. Refreshing enough for summer and warm and comforting enough for a winter dish.
